This morning, I was trying to figure out how to fill Theo’s lunchbox so it wouldn’t come home full. I asked him what he might like, and surprisingly, he said pumpkin muffins. Turns out, the recipe for the pumpkin cake in Room at the Table makes great muffins. It’s an easy, one-bowl recipe, so doable before school. (If you only have one child, and that child is up at 5:30 am 🙃).

Just follow the recipe, divide between lined muffin tins and bake at 350 degrees for about 25 minutes. They are gluten- and dairy-free with no refined sugars.

Universal Studios! Our nieces have been wanting to take Theo to Disneyland since before he was born. This was kind of the trial run. He loved it, and just wished there were more roller coasters and more characters. Sounds like Disneyland!
